This is a very quick one, but it will open your eyes to something wonderfully different.
- Prepare your normal Jalfrezi sauce, but without any meat at all.
- Remove the bones from a Costament Foods dry-smoked snapper and break into large flakes
- Once the sauce is ready, add the snapper and stir in.
- Allow to simmer for 20 minutes so the "two-way magic" can work - sauce flavour into fish and fish flavour into sauce.
- Stir gently once or twice during this process.
Viola! Repeat with any curry.
